PUMPKIN CHAI MUFFINS

PUMPKIN CHAI MUFFINS COFFEE SMOOTHIE COOKIE DOUGH BITES MANGO COCONUT SMOOTHIE PERFECT FIT BROWNIE PEANUT BUTTER BANANA SMOOTHIE

Warm Chai and Pumpkin Spices are our favorite for when the weather gets cold. Pumpkin Chai Perfect Fit Muffins are delicious for a breakfast, dessert, or an afternoon snack, you really can't go wrong with these tasty bites. 

Ingredients:

1/4 cup coconut oil
1/2 tbsp crushed chai tea
2/3 cup pumpkin puree
1 egg
1/4 cup Pumpkin Spice Perfect Fit Protein (or, 2 scoops)
1/2 tsp baking soda
1/4 cup brown sugar
1/2 cup almond meal
Optional: 1/3 cup chopped almonds

Directions:

Preheat oven to 350 degrees. In small bowl, mix coconut oil and crushed chai tea. Pour into large bowl, add wet ingredients (pumpkin puree and egg). In separate bowl, mix dry ingredients (pumpkin spice protein, baking soda, brown sugar, and almond meal). Want a little crunch? Add chopped almonds or your favorite nuts. Mix all together into a batter-like consistency. Spray muffin pan (we use coconut spray) and place batter into pan. Bake for 20 minutes or until toothpick comes out clean. Makes 6 muffins. 

Make it photo-ready by topping with a sprinkle of coconut flakes, cinnamon, or pumpkin seeds.

This ice blended coffee pick-me-up with Perfect Fit Vanilla Latte will get you moving.

Ingredients:

1 scoop Vanilla Latte Perfect Fit Protein
1/2 frozen banana, sliced
1 cup ice cubes
2 tsp whole espresso beans (or grounds)
1 shot of espresso or 1/2 cup of coffee
1/2 cup almond milk

Directions:

Place all ingredients in blender, blend until smooth. Makes 1 serving.

Our Perfect Fit Cookie Dough Bites taste like sugar cookie dough (without the dough)! Rolled in Perfect Fit quinoa crisps, these shareable bites have just the right amount of sweetness and crunch.

Ingredients:

6 medjool dates, pitted
1 scoop Vanilla Perfect Fit Protein
1/4 cup unsalted cashews
1/8 tsp salt
1 tsp vanilla extract
2 tbsp almond milk
2 tbsp Perfect Fit Quinoa Crisps

Directions:

Place cashews in food processor and grind until butter-like consistency. Pour into a separate bowl. Place dates in food processor and grind until paste-like consistency. Add to bowl. Add remaining ingredients and stir until fully incorporated. Roll into 1/2"-1" balls. Coat the outside of the balls with Perfect Fit Quinoa Crisps. Place in freezer for at least 30 minutes to set. Makes 8-10.

Ingredients:

1 banana, mashed
2 eggs
1/3 cup coconut oil
1 tsp baking powder
1/3 cup Chocolate Perfect Fit Protein
1/3 cup maple syrup
1/2 tsp sea salt
2/3 cup cocoa powder
1/3 cup brewed coffee or almond milk

Directions:

Preheat oven to 350 degrees. Mix all wet ingredients with mashed banana. In a separate bowl, mix dry ingredients. Slowly add dry mixture to the wet. Spray loaf pan and pour in batter. Drizzle 1 tbsp of maple syrup on top. Bake for 30-40 minutes or until toothpick comes out clean. Makes 8 servings.
