PUMPKIN CHAI MUFFINS

Warm Chai and Pumpkin Spices are our favorite for when the weather gets cold. Pumpkin Chai Perfect Fit Muffins are delicious for a breakfast, dessert, or an afternoon snack, you really can't go wrong with these tasty bites. 

Ingredients:

1/4 cup coconut oil
1/2 tbsp crushed chai tea
2/3 cup pumpkin puree
1 egg
1/4 cup Pumpkin Spice Perfect Fit Protein (or, 2 scoops)
1/2 tsp baking soda
1/4 cup brown sugar
1/2 cup almond meal
Optional: 1/3 cup chopped almonds

Directions:

Preheat oven to 350 degrees. In small bowl, mix coconut oil and crushed chai tea. Pour into large bowl, add wet ingredients (pumpkin puree and egg). In separate bowl, mix dry ingredients (pumpkin spice protein, baking soda, brown sugar, and almond meal). Want a little crunch? Add chopped almonds or your favorite nuts. Mix all together into a batter-like consistency. Spray muffin pan (we use coconut spray) and place batter into pan. Bake for 20 minutes or until toothpick comes out clean. Makes 6 muffins. 

Make it photo-ready by topping with a sprinkle of coconut flakes, cinnamon, or pumpkin seeds.
